This is the best haricot verts recipe to make for a green bean hater. The haricot verts are fresh and crisp, with a sweet, rich depth from the caramelized shallots. The toasted slivered almonds add extra crunch and a delicate nutty flavor.

Ingredients
  

  • 1 lb haricot verts fresh and firm
  • 3 tbsp butter
  • 3 tbsp shallots chopped
  • 2 tbsp slivered almonds toasted
  • ¼ tsp black pepper
  • ¼ tsp salt

Preparation Steps

  • Gather the ingredients and equipment for the recipe.
  • Wash the haricot verts thoroughly and trim their ends.
  • Peel and chop the shallots.

Cooking Steps

  • Add 4 cups of water to the cooking pot and bring to a boil.
  • Blanch haricot verts. Add the haricot verts to the hot boiling water and cover the pot. Cook for 3-5 minutes until tender but firm.
  • Remove the blanched haricot verts from the hot water and transfer to the colander to drain. Rinse under cold water to halt the cooking process.
  • Heat the skillet over medium heat and add butter.
  • When the butter shimmers, add the chopped shallots to the skillet. Saute for about one minute or until slightly browned.
  • Add the haricot verts and season with salt and freshly cracked black pepper.
  • Saute briefly, then add the slivered almonds. Mix well and serve immediately.

Notes

The prep and cook time do not include toasting the almonds. Use pre-toasted almonds to save time.
